Fried food isn't necessarily unhealthy.
If you're using liquid oil to fry with it is likely very high in omega-6 fats (primarily linoleic acid). These fats are unstable, oxidize rapidly, and produce aldehydes and other toxic metabolites especially when reheated and combined with carbs (pretty much all fried food).
If you use saturated fats, they are much more stable with repeated heating so you can have healthy fried food. Tallow is king here.
Unfortunately most lard and duck fat is super high in omega-6, regardless of being solid at room temp.
