Here I have ground elk with roasted sweet potatoes & asparagus, and chili lime shrimp with basmati rice.

While that’s going, peel your sweet potatoes (or white potatoes) and chop into bite sized pieces.
Toss in a bowl with a drizzle of oil, salt, pepper, garlic powder and paprika.
Roast at 425 for about 25 minutes, flipping half way.

Once those are going, season the shrimp. I used a drop of oil and chili lime seasoning but you can use any seasoning you like. Set aside.
Throw your ground meat a pan over medium high heat, and cook until no longer pink. I seasoned with salt, pepper, garlic powder and onion powder, but again you can use any seasonings you want. You can also add fresh onions & garlic.
When that’s done, heat a clean pan over medium high heat, and cook your shrimp for about 2 minutes per side.
Lastly, the asparagus was simply thrown in a pan over medium heat with some tallow, whole garlic cloves, salt and pepper. Cook until your desired texture is reached.

Assemble your bowls. I added some pico & lettuce to the shrimp one, but would have loved to add some microgreens.

This is by no means a gourmet meal, but this should only take about an hour and you will have 8 nutrient dense, enjoyable meals ready for your busy week.
