SHRIMP FRIED RICE

Ingredients:
-1-2lbs shrimp
-3 cups white rice (refrigerated overnight)
-1 cup frozen peas & carrots
-2 eggs (or more)
-1 small onion, diced
-2 garlic cloves, minced
-1 tsp minced ginger
-3 tbsp coconut aminos or soy sauce
-3 tbsp oyster sauce
-3 tbsp chopped green onions
-Honey
Start by making a marinade for the shrimp: 1 tbsp coconut aminos or soy sauce, 1 tbsp oyster sauce, 2-3 garlic cloves minced, 1 tsp minced ginger, a dash of honey & a pinch of salt
Over medium high heat, add a dash of oil and cook the shrimp for 2 minutes a side, then set aside
In a clean pan, add a drop of oil and lightly scramble your eggs (donโ€™t overcook them), then remove & set aside
Add the onions and cook until they start to soften, about 3-5 minutes, then remove & set aside
Add of oil to the pan and stir fry the garlic and ginger for 30 seconds
Add the frozen peas and carrots and stir fry for an additional 2 minutes
Add the rice and stir to combine. Add the oyster sauce and soy sauce. Stir to heat through
Add the onions, eggs and shrimp back in the pan and stir in the green onions. Cook until everything is heated through, garnish with more green onions and enjoy!
This is a great meal prep or quick weeknight dinner. You just have to make sure the rice is cooked in advance! Enjoy and feel free to ask any questions in the comments
