Secret history of Rice and Chawal or Rice and Dal.
Why they go together!

Dr. Lad has a clinic in New Mexico. His book is short, sweet and gives you basics.
Page 232 has long table running to several pages on quality of food substances.
Rice reduces Vata, increases Pitta and Kapha
Dal increases Vata but decreases Pitta and Kapha.
Thus Dal compliments Rice.
So they are paired because they complete each other.
There is similar relation with Dal and Wheat!
So Ayurveda pairs these foods together.
So if you just follow Ayurvedic advise you can see how to get optimal nutrition and stay healthy for long time (Ayush)
Now, the scientific reason. We need 20 odd Amino acids for optimal health and Carbs as well as proteins and some amount of fats. Every one knows that rice has carbs, lentil has proteins. But what is surprising is Amino acid pairing!

Now you see that lentils are short on amino acids that need sulphur (like Methionine) but then rice or wheat step in to provide that!
