Monday is also known as a day of the Moon. Fasting on this day allows us to improve the influence of the Moon on our lives. According to astrology (jyotish), Moon represents mind, feelings, and emotions. It's great to have them under control. Stable mind equals to stable,
happy and healthy life.
What to eat/drink? Whatever you feel comfortable with.
1. Some people, who consume meat, would stay away from eating meat on Mondays;
2. Some would abstain from consuming grains, pulses, beans. They would eat only dairy, nuts, fruits and vegetables
3. Some would fast on fruits and vegetables
4. Some would only drink water for the who

5. Some would have a dry fast: no food and water.
See whichever type of fast you are more comfortable with. You have to give up something for Monday. It has to be some sort of austerity (tapas).
You will end up having more time on Mondays. Free from eating and cooking. Less time for your body, more time for your Self and Lord Shiva. You could spend more time meditating, reading scriptures and doing japa. You will also end up spending less money on food on
Mondays. It is not mandatory, but if you donate the money that you saved on food towards a good cause – you will create more good karma for yourself.
When to start and when to break the fast?
Again, it depends on you.
